Railroad Pie

This Railroad Pie recipe comes straight from Personal Rancher community members Gina & Michael Smiley, who’ve been cooking with ranch-raised beef for years. It’s a hearty, old-fashioned skillet meal — layers of savory ground beef, corn, and golden cornbread topping baked to perfection.

Ingredients

2 pounds ranch-raised ground beef
-
1 onion, chopped
-
1 can (14 oz) tomatoes with green chilies (like Rotel)

½ cup water
-
1 can (14 oz) cream-style corn
-
1 teaspoon salt
-
½ teaspoon pepper
-
1 teaspoon chili powder
Topping
-
1 box cornbread mix
-
1 egg
-
⅓ cup milk
-
1 can (14 oz) cream-style corn
-
1 cup cheddar cheese, grated
Instructions

In a large cast-iron skillet, brown beef and onion. Drain if needed.

Add tomatoes, water, 1 can of cream corn, salt, pepper, and chili powder.

Simmer for 15 minutes.

In a separate bowl, mix all topping ingredients until combined.

Pour cornbread topping over meat mixture (or layer in a baking dish: meat first, topping second).

Bake at 400°F for 20–25 minutes, or until cornbread topping is golden and cooked through.

Serve warm and enjoy a true taste of ranch comfort food.
